    Long Pumpkin Ale Fermentation?

So I brewed a pumpkin ale back on September 8th (now 17 days ago). I put the pumpkin in for all 60 minutes of the boil, in a fine mesh nylon bag. I used the canned stuff too (Libby's 100% pumpkin puree). Anyway, by the time I had pitched my yeast starter, my wort was perfectly clear. I had...

    Bottling a long-secondaried imperial ale

I have a barleywine that I'm getting ready to bottle and it's been in secondary since January at this point. I know for certain that I am going to be re-pitching more yeast before I bottle it. I've seen people saying that you don't need to re-pitch with the same yeast strain you brewed with, and...

Need input on cranberry poundage for a nut brown recipe

First off, this will be the beer I am brewing for this: https://www.homebrewtalk.com/f67/nut-brown-ag-30187/ I've been wanting to brew a nut brown (this one looks/sounds excellent) with cranberries for a couple months now, mainly for Thanksgiving-time. Would anyone have an idea of how many...

    WLP320 Hefeweizen yeast alcohol toleration?

All I can find for info on White Labs' WLP320 Hefe yeast is that it's alcohol toleration is "medium." Does anyone know to what ABV it is tolerant to? I'm planning a 13-14% abv wheat-based braggot. Cheers! :mug:

    RAW honey and potassium metabisulfite

I've made plenty of meads before, but when making a raw honey mead, I typically don't use anything but water and the raw honey because I've been afraid of damaging this natural, nutrient-dense honey. For those of you that don't know exactly what raw honey is, check this link out...

Can I use old oxy-acetylene tank for co2 gas?

I was cleaning my basement up a little today, and I came across a fairly old (70s maybe? :fro:) oxygen-acetylene tank (for welding). I was wondering if I could have it rehydroed and use it as a co2 tank for my kegs?

    Purchasing and filling co2 tanks

Some of you have probably heard this one a lot, but what type of stores (besides online) sell co2 tanks? I live in Massachusetts and a lot of other threads on this topic name local retailers or small chains that don't exist in the Northeast. My online option is actually a pretty good one; $75...

    Bottle conditioning in Growlers

I brewed a 1/2 batch of Irish Red to sell to a friend and he wants them in growlers. As I haven't moved into kegging yet, and don't have a counter-pressure bottle filler, I would have to bottle condition them for a couple weeks to carbonate. I've heard that growlers are not made to handle the...

    Keg is dispensing foamy beer

I'm new to kegging and have just kegged my first batch (IPA). I force carbonated at 30 psi for two days and have now purged the co2 and repressurized at 6 psi to dispense. The beer is at 55 degree F because it's in my basement. Any ideas why its pouring such a foam? I also don't understand how...

    Water salts

If I'm going to use Burton water salts in my brew, should I add the package of it (made for 5 gallons) to my wort before boil, or do I need to add it to the total volume of water before mashing?

A series of batch sparging questions

I'm about to do my first mash (partial mash) and I just want to make sure I have a good procedure down for batch sparging. Let me know if I'm wrong or if you have a better way of doing it. 1.) After I've mashed for 1 hour, I vorlauf and drain the first runnings into the brew kettle. Do I then...

    IBU question

I've heard that the human palate can't taste any hop bitterness higher than 90 IBU's, is this true? Cheers! :mug:

    Partial Mash question

I'm doing my first partial mash today and I have a quick question. I've heard that it is recommended that your mash be made up of around 50% 2-row pale malt to promote good enzyme activity, but since I'm using Light DME instead of pale malt in my recipe (and have no pale malt in my mash) am I...

    Milk Stout / Lactose question

I brewed a Milk Stout and I'm going to add the lactose at bottling time. Do I still need to add priming sugar to my Milk Stout or is the lactose vertually unfermentable? I don't want exploding bottles. Thanks. Cheers! :mug:

Sugar Free Maple Syrup in beer??

This might seem like an odd question, and I feel like a non-purist ****head for asking it, but would sugar free maple (pancake) syrup give a good flavor to beer? Has anyone ever tried it? How much would I need to add to taste a noticeable (light to moderate) amount of maple. Obviously, grade A...

A series of beer related questions

1.) A.) First off, I will say that so far all I have done is extract brewing with grain steeping. I also only use dme and tend to stay away from lme. I was recently told that I should be adding my dme at the last 15-20 minutes of the boil and before that to just be boiling my steep water sparged...
