    Christmas up a Pale Ale?

I am interested in this juniper idea and I think some cherries would be cool. But cherries and juniper is that too much? I'm leaning towards cherries and just the hint of cinnamon, or am I trying to create something that should not exist...

I had the same thing happen with that same yeast a month ago, it didn't look like anything had happened, it smelled fine tasted fine, so I decanted the beer off and fed it some more wort and it went nuts. two days later I brewed with it. I just finished a glass of the the hefe I made with it...

to keg.... or not to keg...

For me kegging is the only way to go. Bottling is such a b!tch system or no system, its easy to get an infection or too much oxygen and all those bottles need to be cleaned and stored. It took the fun out of brewing (well not totally) but kegging, come on now I start the siphon and walk away...

Wiessbier & Vit beer in kegs vs bottles?

I keg both Hefe's and Wit's I think the longest I've had them on tap is 2 maybe 3 weeks. I did notice them both settle out a little bit you could tell more in flavor than look, you know the taste like a hoe-garden:cross: that you didn't swirl to get that yeast in the glass. I had a Wit fall...

    Wrench for pin locks

I would definitely buy or make yourself a socket for those posts. I was using vice grips for a while and its just too stressful worrying about snapping off those pins and not to mention a pain in the a$$. I bought mine from Austin Homebrew I think it was twenty dollars, some of the best money...

    Adding to your finished wort

I brewed something similar a couple of weeks ago and it ended up a little low like yours. I left it alone, I don't like playing with things after the fact. Anyway it turned out great. Tasted amazing, great head retention, and great lacing. Maybe leave it alone with beer there is always a...

    O Rings

I used a razor blade to get under them and free them up. For the dip tube I put my arm in the keg grabbed the tube and pulled up while twisting, tight fit. But I'm pin lock although I can't see that being any difference here.

Hows this for a Brew Kettle?

Bigger is always better, with that said this hobby will take every dime out of your wallet if you let it. Brewing beer can be more expensive than smoking crack. Some of these brewers are filthy rich, I'm just filthy and make use of what I have. If you got a 7 gallon great, keep an eye on it...

    apfelwein attacks

I love Apfelwein!!! But if you don't know when to stop you shouldn't start with this stuff. After a couple of glasses my wife is calling it elfinwine, the neighbor is calling it elfjuice. In their defense we live on top of a snowy mountain where elves do make wine and I usually end up under a...

    Krausen Question

Don't let that Krausen push you around!!! I've had Hefe's that blow off like crazy and Hefe's that don't, but they have all been delicious. Every brews a little different, conditions change(Temp, barometric pressure, efficiency, drunkness while brewing). Beers like anything else, Keep clean...
