Belgian Dubble - Chimay Red Clone feedback

Hi guys, Was keen to give this recipe a nudge, wondering if it looks all good? https://www.homebrewersassociation.org/homebrew-recipe/beer-recipe-of-the-week-orpheo-roja/ I havent brewed many belgian styles apart from Saisons so thought this looked pretty decent. always open to...

    Saison recipe critique

Looks good. I love saisons, my standard grain bill is usually 70% Pils, 20% wheat and 10% Vienna. I would increase the wheat to 10-15% and leave the rye at around 10% then pils for the rest. I cant comment on the yeast as i havent used those strains. I use WLP565 as my main Sasison yeast as i...

    Sorachi Ace in A Saison?

Sorry I haven't used enough of SaaZ or Styrian Goldings to know if they pair well with Sorachi Ace... someone else might be able to provide some guidance here. Personally I would single hop the brew to get the most out of it.

    Belgian IPA recipe

Cheers bro, yeah like I said I know its more of a Saison yeast, but it was on hand so figured id just reuse the yeast cake after i kegged my saison. I was going to use WY3522, but oh well lets just see how it goes... Will be interesting nonetheless! Good point RE the bitterness, not something I...

    Sorachi Ace in A Saison?

Yeah Sorachi Ace is an awesome hop in a saison, gives of some really interesting flavours that can go great with the Belgian yeast strains. I used this with a simple Pils and wheat grain bill and the 3711 yeast, turned out fantastic. Aim for something like 25 - 30IBUs in and add in some generous...

    Belgian IPA recipe

Hey guys, I'm pretty slack at posting so thought I'd share this recipe. This is an experimental brew, so could end up terrible or it could be amazing - I guess time will tell! :mug: After 5 days this has fermented down to about 1.007, sample tastes really nice, with lots of grapefruit/citrus...

US West Coast Ale Yeast M44

Super old thread, but thought id post my experiences in case it helps someone trawling the interwebs. M44 is now my go to yeast for Pales and IPAs. A few things from experience over the past 18months: 1. It is a slow starter when pitched at 18C and has significant lag time. I also found that...

    New Zealand Brewers

Hey all, Not sure if everyone would have seen, but pre-orders for fresh hops are open through a few HBS: I got some via The Brew House in Newtown but i believe Brewtopia, Home Brew West and Finney's Emporium are running a competition - $20 for 1kg of Motueka, Cascade and Nelson Sauvin. :mug:

    New Zealand Brewers

Chur. Unfortunately I cant post a photo just yet as I put it in an awkward spot in the garage and I'm afraid if i move it the Pellicle will drop haha. Anyway I just re-brewed that same beer again on the weekend with 3711 and its fermenting away now. Pretty odd that the fermentation isn't...

    New Zealand Brewers

Oh man I am geeking out, just noticed this huge pellicle on my Saison :) I thought the Brett wasnt going to do bugger all because the F.G was 1.004 and I racked it off the trub. (not to mention the pack of Brett was manufactured in April last year haha). Keen to try it in 3months to see how its...

    New Zealand Brewers

Nice one dude! Im doing something similar for my house warming/engagement party, trying to get at least 5 kegs done. Brewed a Red ale on Saturday using WPL001 California Ale - geez what a beast! went from 1.062 to 1.018 in less than 3 days! krausen was like 7cm+ haha. I brewed a dope Saison...

Hot fermentation temps late in the process

I wouldn't worry it, the yeast has already done its job so the temp swing surely wouldn't impact it significantly (if at all) imo

Saison infected with Lacto (early signs) what to do??

Thanks guys, really appreciate the suggestions. I've got an idea, could i use one of these glass jars with a swing lid. and put 5L in one as is, 5L in another with dregs of brett, and bottle/keg the other 10L? that way I can experiment with it and then maybe just rebrew it on the weekend.

Saison infected with Lacto (early signs) what to do??

Yeah I could definitely do that, I have access to Wyeast 5112 Brettanomyces bruxellensis and Wyeast 5526 Brettanomyces lambicus; unless you mean just use the bottle dreggs of a commercial brett? Could i age it in a keg for 6months? ie rack it into a flushed keg add the Brett bugs and stick...

Saison infected with Lacto (early signs) what to do??

cheers guys, I just opened up the fermenter and its way gnarlier than i thought. Still tastes pretty good though haha. Starting to crash chill it now to stop/slow the spread. Still not sure on the best course of action though... heres a pic

Saison infected with Lacto (early signs) what to do??

Yeah its pretty common, a few breweries do it and sell them at the local brew shops around town. for example: http://shop.brewtopia.net.nz/index.php?cPath=75&osCsid=ectrek79r52pnhafl857uujvh6 Real awesome if you cant be bothered brewing, just add yeast and your away!

Saison infected with Lacto (early signs) what to do??

Well yeah that's true! I had the same infection in a wheat beer some weeks ago that i bought as a fresh wort pack. So I am pretty sure the fermenter is the cause of the infection as it is the same one i used for that brew; and my latest IPA fermented in a different vessel was fine. Anyway the...

Saison infected with Lacto (early signs) what to do??

Hey all, So I brewed a Sasion and it might just be the best beer I've ever brewed, but there are early signs of a Lacto infection (little white spots have started to appear on the surface). Super gutted BUT it still tastes pretty damn epic at the moment; i.e. no noticeable flavour changes...
