I am brewing 8 gallons of starter wort. My plan is to mash and boil for 15 to 20 minutes to gain hot break. After that I will be putting into half-gallon Mason jars. I won't have time to put these in my canner until this evening. My question is should I chill before putting into the mason jars?

I ended up with an Omega CN7832 for free from my father and want to use it to control my RIMS setup. I have a SSR40DA but not sure where the control wiring should come from on the 7832. Should I wire pins 1 & 2 on the PID to 3 & 4 of the SSR respectively?
