Flappy IPA (stealing the wine term)

Help, IPA's are "Flappy" or dull, lacking that crisp bright finish like some of our favorite West Coast versions. What could be the cause? I keep things clean, treat my water, use fresh ingredients, pay close attention to mash temps, make healthy yeast starters, regulate fermentation...

    You can call me MacGyver

I've been brewing for almost a year now and have been brewing alone from the beginning. My little sister(25), after drinking many of my beers asked how it was done and if she could come over for a brew session. I was excited to have someone else show interest in the process. So we planned...

    Potential Dumb Grain Question

I've recently stopped buying All-grain kits and started buying grains from the LHBS. First beer was Denny's Rye IPA, hit my numbers everything was fine and dandy. (must have been beginners luck) This latest brew was a Winter Warmer with British 2-row (pearl) as the base malt, marris-otter was...

    What to do next?

Mid-May I had some ale yeast laying around and decided to go get a gallon of unpasturized cider. I boiled some brown sugar down and combined the cider yeast and sugar. It fermented for about a month at 70 degrees. It's been sitting in my cellar now for almost 2 months. Should I.... 1. Add...

    Broken hydrometer

My hydrometer broke on me ten minutes after mashing in yesterday. It shattered when it slipped out of its container while in my brewing equipment tub. After much debate I decided to proceed and pull a sample, put it in a mason jar until I can get a new hydrometer. Any problems with this plan?

First all-grain tomorrow and I already have an issue

My buddy said he had a 6.5 gallon brew kettle I could borrow. Turns out its 5.5 gal... My solution is to split the wort into two 3.125 gal boils resulting in a 5 gal batch. Here are my questions... 1. How should I collect first runnings and sparge so that the two have the same preboil...

    Passive/slow fermentation

Has anyone experienced a relatively passive fermentation with the Safbrew wb-06 yeast? It's been 5 days and no airlock activity, however I can turn off the lights and shine my cellphone light on the side of the pail and see what looks like a krausen ring line. Here are some details: Pitched...
