Empty Fermenters, Need a new Brew to Please the girlfriend..

actual fruit. ALWAYS. i've never used an extract or a flavoring just like i've never done an extract beer. I do all grain and always use fresh/frozen/dried fruit (usually in combination) When I work with fruit I puree it the night before and mix in some pectic enzyme (to cut down on pectin...

Any luck getting recipes from brewers?

lol. Well, it helps if you work for said local microbrewery. I was a manager at a small brewery a few years back, loved the scottish and stout. found the brew logs on the computer one night while closing. printed em out and took em home with me. took some doing to convert it down to Homebrew...

Empty Fermenters, Need a new Brew to Please the girlfriend..

I have made a strawberry ale several times, my Wife loves it. See what her favorite fruit or berry is and make something accordingly. The Strawberry Ale came out so well I even enjoyed a fair few pints from that keg

Is it ok to use a bucket for secondary fermentation? (with poll)

if its a relativley short secondary absolutely. I have 1 glass carboy that only gets used for long secondaries (imperials, barleywines, etc) past that I use plastic buckets with spigots for my primaries and secondaries. most of my beers spend 1 week in primary and 1 week in secondary

I bought a Watts charcoal filter designed to be used for ice machines. got some adapters and ball valves and modified it so I could hook my garden hose up to it (my water source in the garage) honestly i havent noticed a huge flavor difference, but i wanted to do it so i did

    Tea Beer

yeah thats basically it. I took my basic Kolsch recipe (that I also make all the time) and played around with the Tea and honey additions. It does take a decent amount of tea leaves to flavor a 5 gallon batch though. dont have Beer Alchemy in front of me but off the top of my head I want to say...

    Keeping color to style.

yeah its from your extract. I've never done an extract or PM, I've always done AG but from reading and speaking to others extracts tend to come out a few degrees darker due to the extract production process

    Tea Beer

I regularly make a Green Tea Honey Kolsch. its by far one of my favorite creations. tastes like an alcoholic versiobn of Arizonas Green tea (which is pretty much all I drink) When i do it I steep a hop bag of green tea leaves for the last 10 minutes of the boil, then throw another bag in the...

Is Beersmith the best software for custom recipes?

Is Beersmith the best software for custom recipes?

true, the windows UI isnt awful, not now that they have made windows 7 a blatant carbon copy rip off of OSX. still, i will never buy a windows based computer. Have always been and will always be a Mac. end of story

    What spare equipment?

I definitely keep 3 extra hydrometers on hand. broken a few over the years and couldnt take starting gravity readings or final grav readings because of it. Extra airlocks and parts ( i seem to break the outer housings a lot so i keep the lids and inner pieces from the broken ones) Extra rubber...

    HELP! Adding sugar during fermentation

I've done this before on a barleywine. What I did was make a 6 pack worth of "beer feed". a mix of belgian candy sugar and DME. boiled on the stove then bottled and capped. Once a week i would add a bottle to the carboy. Seemed to work pretty well. ended up with a final ABV of 18% on it

    quick question on legality

only real thing about that limit, is who and how would they ever really be able to tell? Your not gonna keep 200 gallons of beer sitting around for an entire year thats for sure. So unless you have some official coming to your house every time you brew and checking what you are brewing, I really...

    secondary or no secondary

thats one of those things that has a great divide on opinion around here. Personally thats about the schedule I follow for 98% of my beers. 1 Week in primary (plastic bucket) 1 Week in secondary (plastic bucket) Keg, carbonate for a day or 2 and consume Exceptions are Lagers which go: 2...

    Peru style Chicha

something else to consider is that, from the show, not everyones saliva contains the same amount of the enzyme (I found that to be really interesting for some odd reason) they tested all the employees saliva in the lab to see whos spit was the best to use. granted i am sure you wont be able to...
