    Doctoring a RIS kit.

To be honest, I would do a basic stout kit. The instructions will list the amount/weight of the ingredients and if you want to expand on it later to make a bigger beer, you can find the appropriate ratio to add. Are you also willing to wait 6-12 months for this beer to be ready? RISs take a long...

    Irish Red Yeast

Don't get me wrong, Fuggles is probably the most versatile hops for any UK beer and I love 'em. I've just found that after doing this red recipe 3 or 4 times, that NB really stands up better. Again, just my opinion. Brew on!

    Doctoring a RIS kit.

I usually buy at least a pound or two more of what base malt/extract and a pound or two of extra dextrose. Had to bump up the post boil gravity by a few points on a recent beer and I made a mini beer from .5lb of extract and a .5lb of dextrose. Worked like a charm. Actually, it worked a little...

What came in the mail for you today?

Our homebrew club bumper stickers. Finally!

    Irish Red Yeast

I would consider omitting the roasted barley and upping the CaraRed and CaraMunich evenly to adjust for it. I used 4oz of roasted barley in my red and it's more to the Southern Brown profile than Irish Red. Also, have you considered using Northern Brewer for your bittering hops? They tend to...

    Am I sane?? tell me!

I'm with the others who said the bittering hops is a little (ok a LOT) over the top. I'd definitely consider omitting the first Galaxy addition if nothing else.

    Hmmm what to brew next.....

Now's a good time to get an Octoberfest going. I've got at least 3 more beers on the brewing deck, but I'm thinking about subbing out the planned Belgium Pale for a peanut butter porter.

    Irish Red Yeast

I used a combination of S-04 and WLP004 for my Ryerish Red. Long story short - I didn't have enough time to make a starter and my OG was over the WLP004 threshold, so I also pitched a half pack of S-04. It turned out beautifully and brought out the maltiness but left it just dry enough to let...

What are you doing instead of brewing this weekend?

Rocket City Brewfest! Attending tonight and volunteering tomorrow. Reminds me...I need to make a pretzel necklace.

Is "your beer is so clear" really a compliment

I did 1 tab on my last dry hopped beer and it was mostly clear, so I wanted to see if 2 would bring out similar results with the PtE. I didn't have high hopes and it really doesn't matter to me. I've still got another dry hop addition to go anyway. It was more of an experiment. My fellow club...

Is "your beer is so clear" really a compliment

Here's the way I think in regards to clear beer. If the beer tastes as good as I intended and the brew day was successful (i.e. uneventful), then clear beer is simply an added bonus. HOWEVER, if the beer doesn't taste like I wanted it to and/or the brew day and fermentation weren't ideal, then I...

    Swamp Water Mead

They're already bottled and in storage. I'd hate to uncap them all potentially introduce something worse than it already is. Can you think of something I can blend it with (in the glass) that might make it more palatable? Might try some cherry or blackberry juice. This stuff was only honey in...

    Swamp Water Mead

Back in December my neighbor brought me 9lbs of honey that came from the AL gulf coast (Mobile area). I have never seen honey this dark and create crystals so quickly. I swear it looked like a porter or stout LME. She asked me to make a batch of mead for her late summer party with it. So I did...

Is it worth it to buy bulk grains?

I'm so lucky that we have a local brewery that will sell bulk grain to homebrewers. I can pick up a sack of 2 row for $35 and a sack of MO for $45 (and yeast is free). They will also sell us bulk specialty malt which is great for group buys. I've used 12mo old 2 row before that wasn't stored...

    New Hops

I went crazy one day and bought several pounds of hops that I've never tried. I have an idea for a "tropical" IPA using Madarina Bavaria and Huell Melon as the late additions and dry hop. Has anyone used these together? Should I burst it with a stronger hop (centennial/cascade/amarillo) to give...

Double IPA Pliny the Elder Clone

Forgive me for not reading through all 33 pages but has anyone subbed MO as the base malt? I still have a fair bit of it left and would rather not add more to my inventory as storage space is at a premium.

    Dark honey

I have about 9lbs of a very dark and sweet honey. It is NOT buckwheat, but rather a wild flower varietal from the gulf coast. It smells a little like liquid malt extract, but the flavor is very sweet and complex. It almost leaves a tingle on the tongue with its aftertaste. My initial thought was...

The Inevitable Newbie "Is my mead dead?" thread.

Not sure about mead or wine, but in beer, a little StarSan can actually provide a little boost for your yeasties. Hard to explain, but it essentially sanitizes some of the beer or krausen which the yeast have been working hard on trying to eat. This gives the yeast a little hint to move onto...

    I quit!

You're living on the edge man. I won't even let someone in my garage when I'm brewing if they don't have closed-toe shoes on. I'm the perfect example of how important it is. Do you carry a full carboy up the stairs too? :D

    I quit!

I believe you are spot on in that I need to reevaluate my process. I've gone over some of the more frustrating....ok maddening parts of the last brew days and 90% of it comes from me rushing to get things done and simply not paying attention. Here are some of the major things I've discovered...
