    How long can i wait to pitch?

    I think you will risk contaminating the batch. You might get lucky, but I'd brew something lower gravity so you can pitch without the starter on the same day.

    It might not be the norm, but it's certainly not unusual. Probably a result of higher fermentation temp. If you have the ability, you'll probably get better taste by fermenting at 60-68 degrees.

    Alright, well problem solved for now! I've never brewed cider before, but after doing a bit of research it seemed extremely easy, very scalable, and cheap. 3.75 gallons of cider in the carboy! I don't know why I didn't try this sooner.

    You can clearly see the deformed shape at both the top, and the bottom. You can also see where I "thought" it was 3 gal and 5 gal. Not the case!

    Thanks for the feedback. In that case, since I'd be letting it steep for 15 min prior to cooling, should I subtract 15 min from the boil time? And would you then add your aroma/flavoring hops at or after flameout?
