    Very active long fermentation

This is what my primary has looked like since 24 hours after pitching, which was 7 days ago. The OG was 1.060, used Wyeast 1056 and has been kept at a temp of 66-68F. I had planned on dry hopping either today or tomorrow, but it looks like I'll be waiting a little while longer! Sent from my...

    2.5 gallon batch question

I'm looking at doig a 2.5 gallon batch of coffee stout for my sister in-law's 21st and was wondering if I can get away with putting it into a 5 gallon carboy to ferment? A 3 gallon carboy doesn't seem like it has enough head space to allow for any krausen. Thoughts?

    Fermentation Time

Could I be making better beer by fermenting longer? I currently do a 7 primary, 7 secondary, 14 bottle condition day schedule and I have been reading on here that alot of people ferment for up to 3 weeks or more. When my beers are getting judged at competitions I've only broken 40 twice. Would...

    Just pitch or yeast starter

I have never made a yeast starter, I've always just pitched using Wyeast or White Labs. What are the benefits of doing a yeast starter? Will it really make the beer that much better?

I have my first kegerator, and have a batch that will be coming out of the fermentor next Sunday(mothers day). What is the best way to carbonate the IPA and how long should I let it condition? I will also be dry hopping in the keg.
