Crashing one strain, finishing with another

A few years ago I brewed a saison. It cooled down too much on the 2nd day of fermentation and the yeast went dormant. With no warm weather in the forecast I dumped some lager yeast I had in the fridge in and put the fermenter in the chamber. It finished to be an awesomely balanced lager with...

    Tape measure water level

It just dawned on me that using a tape measure to monitor your water/wort level in the brew kettle makes a lot of sense. Currently measuring 1/2 gallon increments between 3 and 7 gallons. You can divide the measurement between each half gallon by the number of 16ths between them to get exact...

    11 month old yeast

Friday I used a jar of 11 month old yeast to make a starter. I put it on the stir plate and nothing happened until this morning. Krausen! Anyone who says yeast dies after a few weeks/months is incorrect.

    Wyeast 3522 looong fermentation?

I'm doing a Belgian pumpkin ale with 3522. Pitched the yeast on 10/4 and it's still going with regular (every 4 seconds) airlock activity and visible yeast activity in the carboy. That's 10 days! OG 1.066 started fermentation at 68· and ramped up to 72· over 3 days. Is this normal?

    Heffeweizen skunky flavor?

The last two heffs I've picked up have had a skunk flavor/aroma to them. Most recently the Goose Island Urban heff. Is this a characteristic of an American Heff?

    Sanitized regulator?

I've never heard of anyone sanitizing their co2 regulator but shouldn't it be necessary considering co2 is going through it and into your beer?

Bottles to the fridge after 1 week?

I just bottled a beer last Thursday. I wanted it carbed to about 2.8 volumes. It seems to be there and tasting great already. I've done several batches and never had one condition this fast. Eight now carbonation and flavor are amazing but I'm a little concerned. If I bottle now I might be...

Different leaves on the same hop plant?

This is my first year growing hops. I remember Reading awhile back that you can't tell two plants apart because the leaves are identical. So...is it normal to have different leaves on the same plant?

    $4.70 Sparge Arm

Just built this with some PVC from the hardware store. I can't wait to use it and see how much easier it is than pouring cups of water over the grain bed... http://youtu.be/5mBCkq6rKNU

Balancing malt sweetness and hop bitterness

Does anyone know from experience if the IBU ÷ 1000 × OG = Bitter:Sweet actually works? If not is there a calculation that does?

    how's this possible...?

Pre-boil gravity 1.037 60 minute boil Original gravity 1.04 How is that possible? My pre-boil sample was 1.02 @ 153° according to the correction chart and calculator that brings it to 1.038. My OG sample was 1.038 @ 80° the same calculator and chart bring that to 1.04. I'm kinda pissed...
