A few years ago I brewed a saison. It cooled down too much on the 2nd day of fermentation and the yeast went dormant. With no warm weather in the forecast I dumped some lager yeast I had in the fridge in and put the fermenter in the chamber. It finished to be an awesomely balanced lager with really nice saison characteristics. I haven't done anything similar since but have been thinking of doing another lager hybrid. Anyone else do this?
