    Hoppy Sour Recipe Critique

Have a read through Ed's process, i followed this form first sour/gose and it turned out great, only boiled for 5mins then pitched lacto, took 72 hours to get to ph 3.4 as i used probiotics with no starter. Then boiled again for 5 mins adding only 5 IBU in total. Adding more hops in the whirl...

Huell Melon & El dorado Pale Ale?

Thanks for all the replies guys, im now leaning towards the 2:1 ration in favour of Huell melon and now thinking i may ad in some Nelson i have, thinking that could be a good flavour component. Something like 2:1:.5 Huell/Dorado/Nelson. :mug:

Huell Melon & El dorado Pale Ale?

I have 200grams each and i haven't yet brewed with either type. Im guessing the El dorado will be more dominant/pungent than the Huell? I was thinking of a bittering addition at 30mins and then a massive whirl pool at 70C followed by a big dry hop, any suggestions on ratios as i want a bit...

Hi, i am going to brew this with the following water profile, does this look ok, any issues that anyone can see? Would i then be ok to swap the SO4 and Cl values around and brew the same beer and see how they compare?

New England IPA "Northeast" style IPA

Hmm Ive bought 2 vials of WLP095 in the last month and both starters smelt of rotten eggs, I've made 80-100 starters with ale yeasts and never had this. I emailed white labs and the only thing they could suggest was to slow down my stir plate rpm as some yeast get stressed out with excessive...

Blending WLP644 & London Ale III

Sorry for the non update on this as ive had trouble sourcing some London III when i needed it to brew these. I don't have local access to it. I have done blends with 644/Conan, equal parts but the 644 has such a massive personality it stomped on Conan so a 3/4 to 1/4 in favour of Conan was...

    WLP095 users chime in...

So Whitelabs just emailed me saying to reduce the speed of my stir plate as going to fast can stress certain strains out causing a sulphur smell. Maybe thats the case.

    WLP095 users chime in...

So ive just made my 30th IPA last weekend, most of them using WLP001, WLP090 and some session IPA's with WLP644 for some fruity goodness. Ive been wanting to try the Conan strain and the only 2 yeast brands available here in New Zealand are Whitelabs and Wit yeast, so WLP095 it is. Now out...

    Saison yeast help needed!

So im not a fan of 3711, I'm not a fan of to much clove, white pepper and fruit are my favourite traits in a saison strain. For that I've been using WLP585 Saison Ale III, I've made 7 beers from the 1 vial i got last year, culturing from the starter each time. Alais im now out of this strain...

New England IPA "Northeast" style IPA

I can't see that being an issue, ive done a 5 gallon batch with 550grams of Galaxy (single hop) with a similar grain bill, i could smell it across the room! Bittered with columbus, 150grams whirlpool steep at 70C for 20mins, 150grams whirlpool steep at 50C for 20mins and a 250gram dry hop on...
