    Your mash pH is strong and your sparge pH is weak, so the the mash pH can keep the total pH down to around 5.4-5.5 . Think muscles.

    It does sound like you have two bad probes and probably two good meters. I would buy one probe and try it on both meters and go from there.

    A center OFF is good but a simple double throw switch would never be connected to both sources unless the contact was severly distorted, as in lengthened. The center OFF is just a resting place, otherwise it is the same inside.

    It looks like it will handle 5 amps as is, to measure higher current you would need current transformers also

    It doesn't matter haw it mounts to the pot as long as it seals. What is the watt density? It looks like it might have a brass base which is a plus. $130 seems a bit pricey. You will have to do something to raise the pot.

    SOOW or STW for panel main power cord

    The J stands for junior service, rated at 300v instead of 600v and is softer and more flexible. My first choice would probably be SJW or SJOW SJOOW if I were to also use it as a deep fryer. If you think it might be subject to more physical abuse then SOOW would be better.
