What happens to starch when it is browned?

I know that it undergoes the Maillard reaction and caramelization, but do not properly understand what these processes change the polysaccharides into. How is it different from what happens to monosaccharide glucose? Thank you to anyone that offers assistance. :D

    Movies That Have Hops

Now, I watch a fair share of movies and have never seen a hops plant in a movie. I am not talking about there being a field of hops or anything, but I've never even seen a single vine. Where are all the hops at? Has anyone noticed hops in any films? Maybe I watch the wrong genres.

Cost of Importing Hops to America

Does anyone have any links or other information on this subject? I am talking with my wife's family, farmers, about commercially growing hops here in China and would like to know how much it would cost to send these back stateside. What laws are applicable? Thank you for any and all help...

    Inducing Flowering in Hops

I will start by citing two studies: ---------------------------------------------------------------------- H. L. SHEPHARD, J. S. PARKER, P. DARBY and C. C. AINSWORTH. Sexual development and sex chromosomes in hop. New Phytol. (2000), 148, 397-411 "The switch from vegetative to reproductive...

    Rhizomes in China.

Having called and asked various distributors with no luck, I am starting to think it to be impossible. Maybe I can go looking for wild hops in Qingdao if such a thing exists here. So I ask you, kind netizens, do you know of where to find rhizomes or crowns on this side of the Pacific?

Is this a variety of hops?

This is probably a stupid question, but does anyone know what this plant is? I thought it looked somewhat reminiscent of hop photos that I have seen but I am betting that I am wrong. Close-up:

Brewing beer without malt AKA Maltless Brewing

This is the continuation of my original thread. That thread had become quite over-encumbered and I feel at this point it makes sense to diverge into a new lineage. I will start by introducing the ingredient list of the brew. Grain Bill: 200 Grams of Partially-Roasted Barley 600 Grams of...

Modifying a stock pot for kettle cooling (with illustrations)

Hello! So, I have drafted up a concept of what I am planning. As you can see, it is a large stock pot that has had a thermometer, cooling coil and siphon tube modified onto it. I bought four glass carboys, but then found out later that they were not capable of being heated to the...

Monascus purpureus or: How I learnt to stop malting and love the infection

Well, it isn't technically a yeast, but Monascus purpureus is sometimes used in Asian brewing for certain rice wines. I was curious as to whether anyone else here has any experience with it. It is most commonly available fermented unto rice. In that form it is usually referred to as red yeast...

A new recipe just for China, peanuts and black rice.

Since this is the board for recipes, I thought maybe some of you may be able to help me balance this all out. The idea is to create a dark porter/stout style but with a few unusual adjuncts. Specifically, I will be using peanuts and black rice in the mash. The grain bill, currently, is...

What flavor does rice lend to a brew?

I am planning to use rice in my upcoming brew and would like to know more about the taste(s) it imparts on the final product. Have any of you ever used rice to brew? How well does it ferment? If I use a heavy dosage of non-fermentable specialty grains, how much rice would it take to balance my...

Buying and/or finding rhizomes in China.

I am very interested in growing my own hops, particularly noble varieties such as Saaz. Curious as to whether anyone knew how to get hold of some in China, I decided to consult all of you. Saaz crowns would be preferable. If that is not an option, I would consider other alternatives. Thank you...

    Chinese yeast infection.

It sounds like a terrible disease:cross:. Anyway, I am a hopeful home-brewer living in the northern part of China. Home-brewing is non-existent here so I am a bit of a pioneer I guess. Well, if I can manage to actually make a beer that is! By the way, you can call me Xier. It is a pleasure...
