Craft Beer people are the BEST People

Out of the two Careys from New Glarus, Dan just loves to stay in New Glarus and brew (you are right, he is quiet) and Deb, his wife is always in the news with the president or getting big awards from the state. She is nice too, but she is the public person, Dan is beer guy who comes up with all...

RIS-12% not carbing after 90 days

Ok, I'll give it some more time (another 2-3 months). I like my stouts to have a light carbonation, but I guess if worse comes to worse I can just chill these and drink them as is.

Tequila barrel beer question - alcohol content

Nope. The amount of alcohol added to your wort if the bbl is drained well is not significant. Try doing the math to see actually how much alcohol by volume it takes to increase your ABV by a full %. For a small bbl like you have (5L) it works out to 1.8 oz. of pure alcohol to bump it by 1%...

RIS-12% not carbing after 90 days

No, I didn't repitch. I knew that I was working on the upper edge for that yeast as far as alcohol tolerance which is what made me initially think of adding some additional yeast that has a higher tolerance. I was thinking that if I made up almost a slurry from some dry champagne yeast and...

PLEASE HELP!!! i like summer shandy

If you live in Wisconsin go and find a New Glarus Berliner Weiss. I have a wife who is a Lienies Shandy drinker and this is one of the very few craft beers that she loves. My new assignment is to try to figure out a clone recipe.

RIS-12% not carbing after 90 days

I brewed up a pretty hefty RIS last November. OG was 1.124 and FG ended up at 1.034, so I am right around 12% ABV. I used Wyeast 1728 and racked to secondary after one month. I left it in the secondary for 4 months before bottling. I added about 4 oz. of priming sugar and bottled it up. Now...

    Gold Rush - Jungle Gold

We'll ship it 6 months late and it will use rotted rubber bands for a motor....oops- they all broke! I hope Parker nails it this week. He seems to be the only one that tony Beets has any respect for.

Broke my first carboy while cleaning with a wire brush

Etching marks?! Sort of like using a glass cutter to cut a scratch where the glass will break at? If you used acid or a sand blaster to etch the surface I am cool with that, but if you scratched it, that's not a good plan, it's just like using a glass cutter.

it's been more than a year

Yeah, since they moved me into management, I can't do applications work for ***t. I used to have all the numbers right in my head, now I have to look up everything. Plus I get to do a solo visit in the morning to an irate customer who is using the wrong sized hole, but is blaming my parts for...

    Gold Rush - Jungle Gold

I think that Parker is going to hit it big on that new claim. He said that it was the site of the camp for the original miners who hit it big way back when and it's never been worked since they didn't want to tear it down back then. There is a shot during the opening credits of Parker holding...

I'm brewing beer for 100's of people -- how much to brew?

If you feed the guests an average 6 beers at 8% ABV you are going to have a bunch of drunks on your hands- that's the equivalent of 12 Bud Lights. There are a few people who can handle that much, but not many. I don't want to sound like a downer, but looking at that list of beers, it is great...

    Over shot my OG

82% seems pretty high for BIAB. Are you sure about your OG?

    First Recipe. Opinions

What are you aiming for? If it's a hefe, that's going to be pretty hoppy.

    Blonde honey wheat weird

According to my calculations that is going to end up at 4.8 - 5.0% ABV. Why all the different malts? This is supposed to be a simple recipe and there are 5 different malts that you are adding, I would not add the vienna and munich if I was doing it. Hops seem pretty good, you might want to...

    Total Novice/White Gunk

Looks just fine, Fermenting yeast looks pretty disgusting, but trust us; all is well. Just wait until you have some big (1.120) stout bubbling away in there is you want to see some ugly looking gunk! The white stuff at the bottom is just finished yeast starting to settle out. All is normal...

    Farmhouse Brewing Supply

Just like Nightrider, I'm lucky enough to be able to call them my LHBS! Great place; if you are ever heading past Janesville on the Interstate, pull off at the northern exit and they are only 1/2 mile away on the main road. John has a good selection of yeast on hand in addition to the hop...

    Gold Rush - Jungle Gold

Tony asked Parker if he would see him up in the Klondike and he said yes; I can see him setting up next to Toad and actually running an operation that gets gold. I would like to see Parker hit a pay streak somewhere, he seems like a pretty decent guy; Tony seems to like him, and I get the...
