I wonder if you put the fine controller at it's lowest setting then adjusted the course to 40. Could you then use the fine controller to adjust up for fermentation?

Using the thermometer

I dissolved some sugar in water and put it into my fermenter. When i opened the bucket i noticed that it was fermenting again. I dumped the sugar in for good measures. I hope it gets down to where it needs to be.

Anyone have any ideas?

I am at Singapore sea level. I have used a few thermometers and they are saying the same thing.
