Are the yeast packs from July (It wasn't clear if the yeast was fresh or if you bought them with the kits. If the yeast was purchased last July it would not be at all unusual for the starter to be slow to start. You can expect that only about 10% of a yeast pack from last July is still viable...

Looks fine. Put the cover back on and leave it alone. After 2 weeks take a fg reading and bottle. Fermentation can be ugly. 99 times out of 100 it will turn out fine.
I must agree that I've had no issue. I too can't speak highly enough of going stainless. About 20 batches now In my conical and will never go back to carboys. My favorite aspect is the ability to primary and secondary in the same vessel.
