    First time using this yeast. I made a starter and today in the morning there was some krausen but when I got home it pretty much dropped and is swirling around the bottom clumped together. Is that normal? I've never had a starter do that before.

    S-O5 Yeast ?

    Thanks for the replies. I'm used to using starters so they usually take off within 8 hours or so. I have a fermentation chamber so I pitched at 68 and held it there. This morning it's bubbling away with an inch of krausen so it's all good. I guess I over reacted a little.

    So I brewed a pumpkin ale that I've done several times in the past with no problems using S-05. It's been over 24 hours and very little activity in the fermenter. I rehydrated before pitching. Should I repitch another packet tomorrow or do you think it's too late. What do you guys think?

    The thing is I haven't added the watermelon juice yet which restarts the fermentaion so I was bit concerned about that. It only takes a day or two for the yeast to eat the sugar in the juice but still.

    So my fermentation chamber is full with a watermelon wheat 2 weeks in and an Octoberfast thats 1 week. I wanted to do a pumpkin ale this weekend but I'm worried about off flavors if I take one of them or leave the pumpkin out as the coolest part of my house is 70-72. What do you guys think?

    Barley Crusher Maintenance ( second time in 110 brews )

    The cleaning, taking a wire brush to the rollers and replacing the orings was a quick fix for me right now but I can see the writing on the wall. I think I'll start saving for a monster mill as a long term solution.

    I meant previous batches of other beers I usually end up topping off because I usually end up boiling off too much so I overshoot my og. But the last two times I made this beer for some reason it didn't boil off as much as usual so batch was weaker because of it. Next time I'll use less sparge...

    S04 didn't finish...should I repitch

    Sample isn't bad. Just weak. Previously finished batches were at 1.015 or so. Mashed at 156.
