    Time to build up 2 step lager starter

    Lager yeasts do not floculate out as quickly as ales yeast. Make sure you leave enough the in between the steps and at the end to let the feast settle out. As previously mentioned, 48-72 hours should be plenty.

    Hard boil vs gentle rolling boil???

    I would think you would get less color development with the lower heat required for a gentle rolling boil. As long as the wort is moving and steam is coming off you are volitalizing and driving off things you don't want left behind. In addition you will use less energy. Go Pack Go!!!

    +1 on bottle capper Just lost a full batch of porter when one of the handles snapped capping the third of 52 bottles. So sad.

    Henry22 - Not sure where you are, but in NJ you can gt a DUI and lose your drivers license on a bicycle. It is considered a vehicle and you must obey all the same laws as a motorized vehicle.
