    Did you secondary? If yes, for how long? After a certain amount of time your yeast can age out and you either need to force carb or add more yeast before bottle conditioning.

    Water loss to grain

    I find that there is some amount of absorbtion in batch sparging but then again, I allow a 15 min rest before taking second runnings.

    Sparge steps

    Can anyone give me their opinion batch sparging relating to number of steps. I'm debating doing 1 sparge for second runnings with a large volume vs 2 sparge runs with 2 equal lower volumes. Wondering about the effect on efficiency.

    I also find that its easier to come under volume as opposed to over volume post boil. That way you can just add water to correct concentration and volume. Just something to keep in mind as you experiment.

    The cost at the LHBS definately depends on location. In metro NY where I am things tend to run a bit higher in any store you go to. Especially at homebrew shops

    It likely won't at all. And 1 hr is a very common boil time. The boil "mashout" actually happens before the pot starts bubbling. You'll be fine.

    Anyone know of a decent LHBS in or near nassau county, NY? Can't find one anywhere. Driving to Brooklyn is far too much of a hastle.

    ss spotting?

    Hey guys, I was a little less than prudent drying off my brew kettle which is stainless and it now has some pretty serious spotting. The cosmetic issue doesn't bother me at all but I wanted to know if this spotting damages the kettle in any way.
