    Old Hops Woody Flavor

    Keeping hops in the heat should make their oils evaporate faster, reducing their effectiveness, but I dunno about a woody flavor. Are you possibly getting older extract? Just thinking out loud.

    Like a European version of Chili Pepper Beer! +1 to the smoked porter idea, I think the earthy notes will go well with the curry spices.

    My Barley Wine Learning Experience

    I recently had the same thing happen with a moderate gravity IPA. I almost threw it out, but then I thought to myself, "It doesn't cost me anything to rack it to the secondary and wait to see if it is infected." Turns out it wasn't, drank some last night. I'm glad I had the patience.

    When I make wine (I just experiment with one gallon batches right now) I leave it in the primary until it begins to clear on its own, then I rack to secondary. Usually by the second racking it is pretty clear unless I use something with lots of particulate in it (guarana for example). Sometimes...

    I just made an extract kit that was American IPA, but I replaced the LME with wheat LME. It turned out really good. It is getting better with age as well (2+ mos).
