    I've mostly stuck to tried and true recipes, but what I went to do for my next beer, is use the brewing classic styles red ale grain bill , with the Hop schedule of the pale ale with caramel, from the same book. The og for both recipes is very similar, so I'm hoping it will turn out well...

    I'm curious as to the general process everyone uses for mash/batch sparge. Does everyone usually calculate the mash by using X qt/lb of water, then let that sit for 60 minutes. Drain that into kettle. Then sparge with the amount of water you need to bring you up to your needed preboil volume...

    How soon is too soon to raise temperature on Fermentation.

    After about 2 days, once the growth phase is over, its safe to raise the temp without the worry of getting off flavors. so your good, dont worry about it.

    Recommended external temp control

    I also recommend a dual stage. Even if you don't think you need it now, you may use it later. I have a single and dual stage love controller, and they work great.
