I hope so...anyway I think the campden tablets would have been the safest bet, but i don't have any so I'm just going to take the risk and see what happens.
Yeah it will be very dry, I just sampled a hard cider i have going that consists of 5 gallons fresh pressed cider and 3 pound dextrose. It's OG was 1.075 and the reading i just got after 6 weeks 0.990 It's definitively got a bit of an alcohol burn to it.
Apfelwein is just about the only drink that does not give me a hang-over...hardly even a headache. That doesn't mean i haven't found my pants in weird parts of my house not understanding why there their the next day...lol
I've been wondering if their were many negatives to bulk aging the cider on the trub...I'f I were to rack it to a secondary it would be in a week or so once my apfelwein finishes.
I've had a hard cider going for just about 6 weeks now and just yesterday the airlock essentially stopped bubbling. It's had a fruit fly in the airlock for a while now and i just got some suck back :o ...Is my batch going to turn to vinegar? is there anything I can do?

Generally the higher the ABV the longer your going to want to let it age. So yes you will have something drinkable, maybe 2 weeks after being bottled but most likely it will be far Superior at 6 months
