    Im just about done a 1 gallon batch. Last step to bottle. I tasted it when i removed the rasins n racked it one last time. Nice hint of banana but extremely booze-y. Does the booze-y ness disappear?

    2 options I've read to minimize the had space was add water to top it up but that dilutes it. And the second that is a great idea is to use marbles. Sanitize them first then put them in the carboy. I read that on one of the posts here. Topping off carboy has lots of great ideas. Booker
