    Banana Wine

Im just about done a 1 gallon batch. Last step to bottle. I tasted it when i removed the rasins n racked it one last time. Nice hint of banana but extremely booze-y. Does the booze-y ness disappear?

Thanks for the tips bernardsmith. I thought boiling the peaches would kill the wild yeast too. Booker

    Peach Cider Recipe

This sounded so good I had to try it. Just finished putting it together tonight. I went with 5gal instead of the 3. Just made the changes to the amount of sugar and peaches. 15 lbs of peaches and 5lbs of sugar gives a reading OG 1.60. 8% if I let the yeast eat all the sugar. 2 things I'm doing...

    finishing my cider..pasteurization?

Sounds close to the caramel apple cider recipe that I've seen on here. All good except one very important part which is the time. 3 to 4 days I guarantee you bottle bombs. I followed the caramel apple cider recipe that called for 2 cups water 2 cups Brown sugar n 2 tsp ground cinnamon. I let...

    Caramel Apple Hard Cider

Hi guys, I must not be doing something right. I've tried this twice and mind won't win 5th place nevermind 1st. It's drinkable but not something I would recommend. And after reading all the posts on how great this is, I figured I must be doing something wrong. I followed the instructions. 2...

    Caramel Apple Hard Cider

Just a quick fyi for anyone who chooses to carbonate this cider. This one carbs extremely quickly. within 48 hours I went to pasteurize the bottles and 2 min into the water that was about 190F bottles exploded. I removed bottles and had 2 explode out of the pot; leaving 2 dents in my ceiling...

Pics from my Blueberry apple cider. 5 Gal of store bought apple juice fermented with EC 118 wine yeast and dark oak chips. then racked and sat in carboy with 4kg of frozen blueberries. After a month in the carboy rack to clean carboy and juiced the blueberries. Then topped it off with more...

    fermentation stalling

Hi Everyone, I'm making 2 new batches of cider one my own recipe and one from this site. I have both in a 6Gal carboy and after about 2 weeks fermenting they both stop bubbling. The temp is about 15C; so I know I'm not cold crushing them. I read on one of the posts that the head space...

    Head space

2 options I've read to minimize the had space was add water to top it up but that dilutes it. And the second that is a great idea is to use marbles. Sanitize them first then put them in the carboy. I read that on one of the posts here. Topping off carboy has lots of great ideas. Booker

    Head space

Hi folks, How much head space is to much? Also when you rack it to the second carboy does it matter how much head space there is since the yeast has already done its job by this point?. Thanks, Booker

    Caramel Apple Hard Cider

Does the nottingham yeast give a hint of beer to the cider? My wife doesn't like beer at all. Even a hint of beer is no good. Thanks, Booker

    Dave's Carmel Apple Cider

Here's a question about your recipe Ellicit and fire anyone else who has made this. I started making this about 2 weeks ago. I used rougemount royal gala apple juice (don't have treetop or motts apple juice in Ontario). I've used this apple juice in other batches. I added the 2lbs of dextrose...
