    Taste test reveals a hoppy pale ale. Whether this will change over time remains to be seen. For now I think I will have to drink half of it and stick the other carboy in a dark corner for a few months to see what transpires. If I get a better picture I will post it again.

    This is supposed to be a hoppy APA but after racking away from the dry hops this white growth started up. I am not ready to dump it quite yet but was wondering if anyone knows what it could be??

    It should be okay as long as most of the sugar dissolved into the beer before bottling.

    I would not waste your time with the Heineken bottles. They won’t take a cap. I think small Grolsch bottles are the same.

    Who else have given up on airlocks?

    Time to get a larger fermenter. I use 15 gallon fermenters with airlocks so there is always a 5 gallon buffer zone where the krauesen can climb up!!!

    IPA yeast recommendation

    If you are going to use dry yeast then I would try and get Safale-5 or 56 (same yeast). It is essentially the same yeast as Wyeast 1056 which is awesome for clean APA’s.

    I would go buy the book Radical Brewing from Randy Mosher. It has some good info on making and roasting your own malt. In fact I am making my own crystal malt as I write this!!!

    Belgian Dubbel with a ton of yeast in the bottle??

    Just bottled a Belgian Dubbel a couple of weeks ago and I just noticed that there is a ton of yeast/sediment that has settled to the bottom of the bottles. It appears to be yeast along with some hop residue. I didn’t notice this when bottling for some reason. Anyone have any comments as to...

    Time For Clearing in Bottle

    Best way is to let let them carb up until you think they are ready and transfer to a fridge or store somewhere cold and let them settle out and clear up. My clearest beer was a belgian dubbel which sat in a beer fridge (@7C) for several months before drinking.
