I brewed a partial mash imperial stout a few days ago.
OG was 1.090 when I pitched the yeast.
The wort was temped at 68 degrees at time of pitch.
I woke up 24 hours later i saw the airlock doing it's thing but the temp was now at 75. Another day...
I am fairly interested in it. I'm trying to find out the "why" for a lot of the reasons people do why they do when building grain bills and hop bills as well as fermentation and what not.

How do I lower the FG?
I'm starting to think that I may want to do a single hop recipe.
I am really interested in simcoe hops. I may end up doing these at the times some of you suggested in the boil.

I scorched my LME on my first batch and it didnt show up until about six weeks in the bottle. It tastes like burnt wood and paper. It's rough. Hopefully yours doesn't do anything.
I brewed a wit which is in its second week in the primary. I had crazy active fermentation in the first five days and then the gravity reading ssllllloooowlllyyyy got down to the specified FG on day 10. (now on day 14)
My current brew is a Belgian wit which is my third brew. I tried the "dump it all in method" and its actually working better for me. Like the others said, just be sure to siphon the beer when you rack into the bottling bucket.
