Sorry about the delay, haven't checked HBT in a while. Put in some amylase on 7/6 and still hovering near 1.020. I decided to just carb it and maybe it will be drinkable although its sweet. I was surprised the amylase didn't drop it at all. I am thinking it was a combination of the yeast...
I have a Imp. Rye Saison that had an OG of 1.080 pitched WLP568 after a 1L starter back when I brewed it in March. It made it to 1.020 and stopped in a week or so and hasn't budged. I had to rack it to a keg after about a month in primary so I could make a cross country move. About a month...
Yea 62 is low for that strain. If you can move it to a location where it can stay near 70 it might drop lower, rouse the yeast a bit too, there is not much to lose at this point. Doing anything now other than letting it finish would produce very under attenuated beer, not enjoyable.
Whelp, it will be different that's for sure. It will prob be astringent due to the high temp. Try and get some amylase to try and save it. I wouldn't give up on it yet.
I would let it sit and try and get the temp to stabilize. The large swings in temp is was causes issues. Its too late to "save" it and its too early to tell if its "bad". You never know it could turn out amazing. In the future I would try and at least keep the temps consistent and pick a...
Let it sit for 2 weeks and try not to think about it. Check the gravity at that point for a few days and see if its stable. If so, try setting it outside (don't let it freeze) that will cause a lot of the cloudiness to fall out of suspension. I try not to even look at mine for 2-3 weeks while...
Update guys. So I got a 2.5G keg for the holidays and it fits in there as well. This could be the best freezer to date. I have one with 4/5g ball locks and 1/2.5g keg and a chamber with 2/6.5 carboys.
This topic has been discussed on several posts but I cant seem to find the exact questions I am looking for.
I brewed Edwort's apfelwein on 11/02/12 and im getting antsy. I took a reading and i am below 1, so good to go and very dry. I dropped it in the chamber to crash for a few days at...
