Another favorite, that is really a prepared dish, is sea scallops with Thai chili/garlic paste in lettuce wraps. You heat up some peanut or neutral flavor oil in a skillet and saute the scallops until just done (overdone scallops are not so good). Sauce is commercially prepared Thai chili/garlic paste, soy sauce, toasted sesame oil and some ground ginger. Take a scallop and add any vegetables you like (sprouts, mushrooms, zucchini slivers) and put them in a lettuce leaf. Wrap it up and dunk in sauce. Spicy goodness. You can substitute shrimp or chicken or whatever you want, of course.

Grab your favorite salsa from the store or better yet get out a few of your favorite ingredients and whip up your own fresh salsa. I am still working on perfecting one I have been working with. A good way to make quick homemeade chips is to get yourself some corn tortillas, cut them into 4s, soak them in a lime-wash, fry 'em up and add salt while they dry on a cooling rack.
