It depends. What kind of juice are you using? If you are using generic store juice, adding some tannin usually helps. Pectic enzyme will help clear the cider if you are using unfiltered juice from the store, straight from a press or are pressing your own. I haven't been using yeast nutrient recently because I don't want the yeast to work as fast. A slower fermentation gives me more time to stop the yeast by cold crashing.
