Im interested in making a one gallon batch of mr. edwort's apfelwein.

I cant seem to find a one gallon recipe; is it as simple as just linear scale down (ie, instead of 2 pounds of dextrose and 5g of yeast, use 2/5 of a lb and 1g of yeast)?

also, if I wanted a slightly less dry finished product, could I just reduce the corn sugar?.. say by 1/4 or by 1/2?

Dude, I would just make a full batch. It takes lots o' time to ferment, mellow, and age. By the time you're ready to drink and decide that you like it (which you will) you will need to do the whole 6 month process all over again.

Btw, instead of worrying if it is too dry, I would back-sweeten with some frozen apple juice concentrate. 4 cans makes a 5 gallon batch absolutely perfect.
