I am making a 1 gallon batch and I only need half a packet of yeast can i store the rest or is it no good to store and how to store it?

Are you using dry yeast? If so, just fold over the edge of the packet, date it with a sharpie, put in a small freezer bag., and pop in your freezer. This assumes you handled the yeast in a sanitary though.

Yep. It's also recommended to rehydrate the yeast before use, but I'm not sure if that's necessary for 1g batches.
