Because I usually hit 2 points above my targeted O.G. for the beer I make with all barley grain bills.
Made my first Hefeweizen today that was 50% 2-row and 50% wheat, and came in 3 points below my targeted O.G. for a 60 minute mash at 153*F.
Would a 90 minute mash yield better results? Or would a step mash be the best approach?
