Any point in doing Hefe without German Pils??

My LHBS doesn't have German Pils. They only have Briess Pilsner malt. Should I just wait and order German Pils or will it be ok with the other??
 
Briess uses 2 row for their pils malt right? If so go for it. The malt won't be quite as good but it is not the feature in a hefe. If it were a Helles or a Pilsner then I would hesitate, but it will be good enough to support that tasty yeast. If I'm wrong and Briess uses 6row then I would say it is probably better to wait.
 
So I will still need a 90 minute boil for the DMS even with the Briess Pils, correct??

My kettle isn't large enough, so I was planning on having to top up once in awhile during the longer boil.

Are there any negatives or points to think about regarding topping up during the boil??
 
Yes and add more wort slowly to keep the boil going.

Wait, add more wort? I was just planning on topping up with a little bit of water. Glad I asked.

Should I just drain a little extra from the mash tun in a different container after I've collected my boil kettle worth and use that to top up?
 
My latest (and greatest) hefe uses plain ole 2-row pale:

(6 gallon batch)

6lbs Pale Wheat
4lbs 2-row Pale
1lbs Munich Light
1lbs Flaked Wheat

1oz Hallertau

Wy3068

I have to force myself to lay off it, it's that good. Scaling it up to a 9 gallon batch for next month right now.

I think it's that little bit of Munich that sets it off.
