Ok I am doing a pilsner and like to build up a great starter. However, through a comedy of errors, I haven't been able to brew for at least 10 days since the starter was ready. Is there a time limit we should look at for storing starters or is a 2L starter @ 44F just fine? How long can we save these?

Look at the starter as a new pack of yeast with a production date of the day your starter was completed. Refrigerated it will be viable, with certain percentage loss of viability for each month stored, as if it was yeast you had purchased.
