I'm overloaded with yeast (plus I have 2 packs of 1026 on its way) and I am interested in your ideas of what to brew next.

For now I'm going to focus on the style to brew and then once we narrow that down I can start looking into recipes.

Here is the yeast I have sitting in my fridge (this doesn't cover the 4 or 5 slurrys I have).

Wyeast 3191 VSS Berliner Weisse Blend
Wyeast 3787 Trappist High Gravity
Wyeast 3944 Belgian Witbier
Wyeast 1388 Belgian Strong Ale
Wyeast 3726 PC Farmhouse Ale
Wyeast 1098 British Ale
Wyeast 1026 PC British Cask Ale
Whitelabs WLP036 Dusseldorf Alt

So lets hear your ideas!

I think the main question is what are you hankering for at the moment? If you're fixing to use some yeast and you want a session beer I say go for the Alt. It's one of my favorite styles.

If you want something sour go for the 3191...

Something Belgian, British? I made an Imperial Stout with the 3787 once. It was my take on Avery's Mephistopheles' Stout and came out really well.

All in all, my vote is for an Alt. :mug:

Wait...do a Belgian Strong!

or do both!
having a lot of yeast hasn't yet been an issue for me luckily. Use the yeast that's the closest to it's "best if used by" date.
