How much do temperatures change the nature of yeast washed to be reused? I have had batches where the temps got too high, and the beers were all a little too fruity and a bit sour(not desirable). Will the washed yeast be mutated from its original profile? Basically asking if the yeast can compromise future batches.

I've washed a few batches now... temp doesn't seem to be critical... not scientific tests but profiles have remained on a esb yeast. one fermed cooler. one fermed warmer... 3 beers 1 yeast culture warmer still fruitier, cooler less, original in the middle temp.. where it should have been... liked the second gen warmer fruiter ester best...
