Is Red Star Champagne Yeast good for mead? I want a durable yeast that isn't overly sensitive to temperature, light, etc. Is Lalvin better? Maybe another variety from those two brands? Those are the two brands I've found locally.

I've only ever used bread yeast before since I've mostly been making 1 gallon test batches, but I'm wanting to start making serious and good quality alcohols, and that starts with proper yeasts.

I'm working my way up to making a Midas Touch clone, but I want to get the foundations first.

If you're referring to Red Star Premier Cuvee, yes, it is a great workhorse strain. Very reliable and easy to use.

Lalvin/Lallemand EC-1118 is the same strain.
