I am going to brew up a bitter in the near future, the recipe is below:


8 pound MO
1/2 pound C120
1/4 pound aromatic
1 oz willamete at 60
1oz willamete at 20
1 oz willamete dry hop
Mash at 154 for 60

I am wondering out of the strains that i have available, what would be most appropriate for yeast?

Bells
Nottingham
Pacman
WLP001

I am leaning heavily towards the bells strain.
 
i've used 1098 in an ordinary bitter and it was great.

i've never used thames valley but i've used thames valley II (PC release). made an excellent ESB. others love it in porters, milds, browns, etc.
 
Wyeast 1968 worked well for my 4th of July bitter I brewed a few weeks ago.
