Hello all

I have a question regarding a subsitution of yeast for my beer link below:
https://www.homebrewtalk.com/showthread.php?t=254684

They did not have the 3711 french saison so the guy at the LBH gave me the M29 French Sasion(Mangrove Jacks) the packing says 79-92 F for the fermentation temperature which is pretty high. In other words I wont be able to sustain that for a month.

My question is can I do the M29 at lower temperature? or which other yeast you guys recommend?

You won't get the saison esters at a lower temp so most brewers so saisons in the summer. The French style isn't as spicy as the Belgian style, which is probably why it ferments cooler.
