Thinking about combining a pack of Belgian Ardennes (3522) and a pack of DuPont (3724) in one large starter to make a high gravity Saison... any thoughts?
 
I do yeast blending all the time, especially with Belgians. But I would do 2 separate starters so I can harvest some for next time and keep them isolated. But I do have a few actual blends that I've been re-using. Just depends on whether you know beforeheand that youll want to use that combination again

That would be Wlp568 to be sure. But yeah, blending is great. I have a quadrupel right now going with cultured Spencer brewery yeast and wlp540 (Rochefort).
