My husband started a new batch this weekend. During the proofing process, he kept it in a dark, semi-warm spot inside the house by the laundry room, which is just a room away from our bedroom. Last night, my nose stops up, I can't breath and have to sleep in the other room with a window open. Has anyone heard of this? I have had reactions like this to certain beers, but very infrequently. ???????

I've never heard of this being an issue before. If there's some sort of airlock on the fermentor I wouldn't think any yeast would able to escape since there's a barrier of water between the beer and the open world. Maybe yeast could escape through c02 that bubbles in the air lock but that seems far fetched to me but honestly I'm not sure.
Only way to be sure it's the beer is to move it away for a few nights, let things clear up, then move it back and see if it happens again. Hopefully you can get to the bottom of it!

I had a friend who drank beer for years and would get flushed with headaches also. He finally found out what was making him feel bad... It was the yeast! He went to liquor after that.

I am allergic to peanuts. I also have a sensitivity to some beer varieties and I think it is due to the yeast types. Some esthery hefes and super funky Belgians get my mucus membranes activated and my stomach hurts.

I doubt it is related to the beer in this case. The airlock would prevent any "airborne" yeast, which would cause an allergy.

I am assuming by proofing, that you mean fermentation.

I have found a couple of breweries whose beers give me gas.

Yes it was trial and error. No doubt one could have a different reaction to a certain strain. That said the starter scenario looks pretty weak without further trials.
