I've just started brewing again and due to some unforeseen luck I ended up with 2 glass carboys as well as a primary bucket. Currently, I've got the bucket fermenting. I've got some extra yeast I might as well use and with the orange pepper saison sitting pretty somewhere between 72-74 degrees(with no outside help) I'd like to start up another that works really well at that temperature. I know it's a little unorthodox to build backwards from the temp but with the weather as nice as it is I might as well take advantage of it.

So do you have any suggestions?
 
What I did in my last Saison:

12# Pilsner malt (mashed at 148)
1# Dextrose (end of boil)
2oz Goldings 60 min
1/2oz Goldings 5 min

Fermented at around 80 (started at 70 I think)
I think Styrian Golding would have been better in that beer than regular Golding though, but I didn't have it at the time.
 
So you guys think my best bet is to go Saison?

Yes, 3711 is a saison yeast. The Cottage House Saison recipe is a good one. There are also several others in the recipe database that are very good as well.
 
The Cottage House Saison recipe is my go to base saison recipe. I just made it for the first time with 3711 fermented @ 62-66F and the results are fantastic. I highly recommend the recipe and the yeast.

Thanks. I'm a few degrees warmer but I think it should be fine. I'll get started on the batch and update this when I bottle.
 
Yep , Cottage House is a great go-to 3711 recipe.

I plan on doing a Ginger Beer with 3711 for summer (prob do a split batch,one with one with) and might also do a pumpkin Saison for fall as well.

Both will be simple - Pilsner malt, maybe some carapils/caramunich and whatever spice/adjunct.

Also, this thread has some ideas for making IPA's etc. with 3711.
