Just thought I would share that I had 5-one gallon batches that had incomplete fermentation using WYEAST 3056.

OG: 1.055, FG: 1.023 - 1.028.

I did the swirl, could not get fermentation going.

Batches were honey, molasses, light brown sugar, straight up, and added tannin. All had incomplete.

It's possible I got a bad yeast, but regardless I thought it was worth sharing. It's also possible I might give this yeast another try in the future, but for now it's an avoid on my list.
 
Wow. Five separate batches. Ouch. While I've heard that additives can interfere with yeast it sounds very much like you got a bad strain. It would be bizarre for a yeast to just stop like that in the middle of a cider fermentation. Beer, yes. Cider, no way. Unless there's something about that particular variety that I am missing.

I also would have felt better if it was one of the batches that something special added to it, but one of the batches was straight up and one of the batches was only added tannin.

I believe too that I got a bad strain. I always used to look at attenuation rates before, but I was told that as long as there are nutrients it tends to be 100% with cider, since less interference.
