Brewing an IPA tomorrow morning, and my last three batches were WAY too sweet. My FGs all ended up much higher than they were supposed to, and they stuck.

My question is whether any harm can come from pitching both the Wyeast 1056 smack-pack and the dry Safale 05. I have both in the house, and I want to make absolutely certain I don't have to pitch a fourth batch in a row.

Any thoughts would be much appreciated. Thanks for your help.
 
I have done 1056 and S-04 together for a little variety, and it turned out well. I'm sure the SA-05 would be fine as well.
 
As far as I know W-1056 and S-05 are pretty darn close the same strain. I doubt you'd see a difference in your final product. If you FG is to high you might want to;

1. Pitch more yeast (min. 2L starter with liquid)
2. Aerate for 15 minutes more
3. Consider adding simple sugar to your recipe (10% is fine)
4. If you're AG, mash at a lower temp, like 149F
5. Hydrate dry yeast for 30 minutes in boiled and cooled water (100F)

This will only work if you *replace* some of the existing malt in the recipe with some sugar (dextrose). If you just add some, all it'll do is basically boost the alcohol content.

Do you want help to try to figure out why you're finishing high? Or do you just want to know if you can pitch both yeasts at once? If the former, a little more info would be helpful. How high of a FG are we talking here? What temps were you fermenting at, what yeast, how long did you let it go, etc? Is this AG, partial mash or extract? On the other hand, if you just want to know if you can pitch both yeasts, yes, you can.
