Hello fellow brewers-
I'm on my 4th Gen of wy2124 and pitched a healthy giant starter into a schwarzbier 4 days ago at 45, let it free rise to 52, and things are going great.....nice fermentation activity as planned and hoped for. Funny thing is there is no sulfur smell whatsoever in my fermentation vessel. The last three rounds of this batch of 2124 produced a decent amount early on, to the point my wife would ask what the awful smell was in the garage, but this is super clean. No concerns, just interesting to me. Any ideas why such a change?
