I screwed up my first wit and hefe by fermenting in the high 70s. Lesson learned.

SWOMB ideas so Blacberry Cobler Ale, and Choc. Hazelnut Porter. Both where crap and dumped.

My first attempt at changing my water chemistry. I switched ounces with grams. Not sure what I was thinking. The final product was a cross between sea water and beer. Probably would have been good for soaking bunions but not drinking.

Mine was a Cream Ale. It was only the second beer I'd made with steeping grains. I don't know if I torched those at way too high of a temp or if the hops were way way off or what. But the result was an amazing beer that was smooth, tasted great, and then 7 seconds post swallow you were hit with an aftertaste that felt like a punch in the face. Most people who try it can't bring themselves to finish it. 3 months later and it's getting slightly better. Maybe in 6 months or so it will be a great beer.

My first beer. At the time I thought it was great. It was an Irish red kit from Midwest. About that time I discovered this site and learned a lot. My second batch was an AG oatmeal stout that turned out fantastic and they just keep getting better. Looking back now, that first one was mediocre at best. Thanks BHT!
