Do you guys just dump the hot caramel into the carboy? There has to be a better way...

Better to disolve it in some cider/water first. You can do that right on the stove while its still warm. This way you aren't stirring your wjole batch trying to mix it in (unless you feel you need the extra O2 for fermentation).
