Making an Anchor Steam Clone... I have made a few lagers with success (D-rests and all), but I have never used the San Fran yeast before. The question I have is since it is a lager yeast which is going to be fermented closer to ale temps, is there still a need for an extended lagering period? Can I do my usual two weeks or so of fermentation, keg (I don't force carb, I let the keg carb for about two weeks before drinking), and essentially be drinking in less than a month. Since a California Common isn't your typical lager, can I treat the fermentation schedule start to finish as I would most of the ales I make?
