Just pitched a vial into my starter. Going to make a 2.5-3 gallon batch to try this yeast out. I used Sprout brand apple juice for the last test batch. It tasted nice. I tried the Wyeast cider yeast. It was ok... Going to give this a shot and see how it turns out. Saw on the whitelabs site that it is a high attenuating yeast. Lots of people saw FGs around 1. That is dry! Might have to end up backsweetening, but that is okay. If I don't like it I might go give Notty a try. Or Mangrove Jacks Cider strain. Or both?!

You're right, in fact, WLP775 can actually go *below* FG 1.000 very easily. I am cold-crashing a 775 batch right now at 1.005, just to see if it will work (flocculation is listed as "medium").

I've had both nottingham and S-04 power through to 1.000 as well, though others have had different experiences. The main difference with these ones is that they flocculate well and can thus be cold crashed w/ no probs. Though they might stop higher than 1 for you, who knows?

One thing about 775 is that it gives off a serious sulfur smell for the first couple of weeks... it dissipates after a short while so don't worry.
 
Well I made a 1.2l starter of 775 with Pilsen DME. My vial was 3-months old. Crashed it, decanted about a liter and then pitched it into 2.75 gallons today. Had fermentation in an hour or less. More like 30 minutes. Forgot to measure og so I will just go get some more juice and measure that. Shooting to ferment at 70. We will see. I will crash before it hits one. Probably around 1.01 or so. Keg and serve. Hope it is yummy.
 
I use the Sprouts juice all of the time, mostly the organic. FYI (if you don't know already) If you buy it by the case (4 pack) they will give you a 10% case discount; just ask someone to grab you one or 2 from the back. :) I just kegged a batch today that I use Notty on and crashed it at 1.011- its already tasty, even as green as it is.
 
Good to know on the juice! I will do that next time. It is expensive juice, but it ferments well and tastes great, both before and after!

Well my little batch is fermenting away. It is sitting at 71*F. I emailed White Labs and they didn't have any guidance on fermentation temperatures outside of their recommended 68-75*F range. So I went for right in the middle.

I put 2.5 gallons in a 3 gallon better bottle and the krausen made it just into the air lock but didn't quite blow the airlock off. Cleaned it out and put fresh sanitizer in. I am looking forward to this thing finishing so I can throw it in a keg and get to drinking.
